Oct, '18'I love sweets. They are the one thing I can’t resist but I do try to. In order to avoid sugar, I just don’t buy any, so when I crave something sweet, I have to improvise. This recipe was a spontaneous creation of mine and, luckily, a successful one. What I love about it is how simple and fast it is. You literally just chuck everything in a blender! It’s a healthy alternative that fills you up in the morning without spiking your blood sugar, meaning that you won’t be craving more sugary stuff later on in the day.' - Elena, The Ascent
Ingredients
• 5 tbsp of oats
• 1 egg
• 1 ripe banana
• A handful of mixed berries
• 2 tbsp of olive oil
Method
1. Blend together the oats, egg, banana and berries. 2. Warm the oil in a frying pan and add the mixture in small amounts to create American style pancakes. 3. Fry until the pancakes are golden. If you’d like your pancakes to be sweeter just drizzle some honey over them and you’re good to go! Let us know if you tried IconInc ambassador, Elena’s, recipe.
