    Okonomiyaki is a Japanese dish. It’s a kind of savoury pancake made up of a batter with cabbage and many other ingredients added in. There are okonomiyaki restaurants in Japan where you buy a bowl of ingredients and cook them yourself on a grill. This is [Chris Hale’s](https://www.iconinc.co.uk/our-community/blog/catching-up-with-chris-hale) take on this popular Japanese food. It’s vegetarian and created exclusively for IconInc.

    Serves 1

    (but if you want to cook with friends in the mega kitchen, just multiply the amounts)

    Ingredients:

    * 2 large eggs * 30g plain flour * 75g diced tofu * 1/2 small diced onion * 25g sliced button mushrooms * 1/4 shredded Chinese or Savoy cabbage * 25g sliced radishes * A dash of olive oil * 1 tbsp sriracha * 2 tbsp soy sauce * 2 tbsp plain yogurt * A handful of watercress

    Method:

    1. In a bowl, whisk the eggs and flour together until they form a smooth batter. 2. Next add the tofu, onion and chopped veg to the bowl. Mix and season with a little salt and pepper. 3. Heat a dash of oil in a medium frying pan. Then add the mixture and form it into a circular shape in the middle of the pan. Cook both sides for 4-5 mins each. 4. Plate up your okonomiyaki and top it with the sriracha, yogurt, soy sauce and watercress to serve.
